I stock up on salad fixings (kidney beans, beets, etc) to make an easy salad lunch with all the extras (a la Whole Foods salad bar) and it makes a boring salad fabulous. I also pick up cans of chili which the hubs loves for a quick lunch or even to make for a snack. The baked zuchinni are a test recipe so hopefully that works out cause they sound delicious!!
